Ingredients:

  • 1 cup dry spaghetti noodles or thin rice vermicelli noodles
  • 1 tablespoon soy sauce (or tamari)
  • 2 tablespoons brown sugar (or honey) – ¼ teaspoon salt
  • ¼ teaspoon pepper
  • Shrimp (frozen, thawed, or fresh)
  • Vegetables – carrots, peppers, onion cloves, and celery.
  • Scrambled eggs (optional)

Instructions: Cook the spaghetti noodles in boiling water for a few minutes until al dente but not overly soft. Rinse the noodles with cold water, then drain.

Add the soy sauce (or tamari), brown sugar, and salt in a large skillet or wok over medium-high heat. Stir until well combined with no clumps. Add in the shrimp and vegetables; cook for about three minutes.

Add scrambled eggs if desired to make Shrimp Chow Mein.

Add the cooked noodles and stir to combine with sauce until well coated, then season more if desired (depending on preference). Add in sesame oil for added flavor.
